Cooking for one can be difficult and wasteful at times. There tend to be lots of left over ingredients that get stocked in the fridge. You shove it all in and forget about it till the next schedule of refrigerator cleaning...like today. Chicken rotisserie left over, half a slice of German sausage, mushrooms, unused canned diced tomato...and a big SIGH...! Around 30 minutes later, I let out another big sigh, but this time its a sigh of yum, yum, yum..! The chicken broth and diced tomato combo once again worked its magic. The added herbs did not disappoint either. Seasoned well, with a slight spicy kick, this surprise left over dish can be a comfort food on cold nights.Here's looking forward to the next fridge "spring cleaning".

- chicken breast, shredded
- German franks, sliced
- oyster mushrooms (or any kind thereof), shredded in big pieces
- mussels (shell removed)
- 1 cup canned diced tomato (juice included)
- chicken broth
- diced carrots
- diced green bell pepper
- diced white onions
- Spanish paprika
- basil
- oregano
- turmeric
- chili flakes
- Worcestershire sauce
- salt & pepper to taste
- rice
Procedure:
- In a skillet, saute everything until simmering.
- Mix everything and check the seasoning,
- Adjust the amount of chicken broth for the rice. Add an extra amount.
- Transfer to a rice cooker (or a dutch oven if there's none). Turn it on and leave it until rice is cooked.
- Serve with a slice of lemon if the rice meal is a bit salty.
