Friends (hi, fans! LOL!) have been asking me why I never posted my recipe for this Filipino comfort food. They know it is one of my pride and joy when it comes to showcasing my cooking. I used to mumble some lame inaudible excuses and change topic. But now I'm facing this question squarely. So why haven't I posted my take on my favorite Tortang Talong? Because its not picture perfect!!! THERE! I've said it! No matter how I try, hu-huh-hu! I just can't flip (more tears here please...). Anyway, if there is one thing that I have realized in this lifetime, It is that I can be as clingy as my zodiac sign! Time to innovate. Presenting, Tortang Talong Patties! Yey!

- 4 eggplants, grilled, skin removed, and coarsely chopped
- 100 grams ground beef
- 100 grams lean ground pork
- 1/4 cup grated cooked potato
- 1/4 cup grated cooked carrot
- 1/4 cup finely minced green bell pepper
- 4 cloves grated garlic
- 1 medium sized grated onion
- oyster sauce
- soy sauce
- salt and pepper to taste
- 4 beaten eggs
- oil for frying
Procedure:
- saute garlic and onion on a skillet. Add meat. Saute until browned. Add green bell pepper.
- Remove excess water or oil.Season with soy sauce, oyster sauce, salt and pepper.
- Add the vegetables.
- Pour some stock (optional), cover and simmer for a few minutes.
- Adjust seasoning. Set aside to cool.
- Mix the chopped eggplants, vegetables, and the meat filling. Bind with the beaten eggs.
- Scoop on the skillet on very minimal oil and on medium to low heat.
- Flip the patties when the beaten egg on top is somewhat firm.
- Serve hot with spicy ketchup on the side.
